Ice Cream Cupcakes

On Friday, we were invited to have dessert with some friends. I made these ice cream cupcakes to take along and share.

They are really easy to make. I bought six kinds of ice cream and sorbet and let them soften on the porch, then used an icing spatula to spread them in layers into cupcake liners. Some of them had Oreo or graham cracker crust, and some were just plain.

What a fab idea! Do you need to mix the sorbet with ice cream to make it more spreadable? And how do you serve them (with or without a spoon)? Very clever and the presentation is beautiful.

@Kathy Speers: I refreeze them and serve them with a fork!

I didnt mix them to make it more spreadable, but you certainly could. I just let them get soft.

Yum, yum, yum. My family makes something similar with an Oreo crust, ice cream, and chocolate icing, but I love the individual servings!

So cute!!! I love these! I’m thinking mocha ice cream with an Oreo crust or strawberry yogurt with graham cracker crust would be great! But I love the sorbet!
